New coffee JAIRO ARCILA

JAIRO ARCILA is our latest addition to our limited coffee section. This coffee has been dried with mandarin zest after a 24 hours aerobic fermentation followed by a 50 hour anaerobic fermentation. But that’s not the only interesting thing about this coffee. It’s produced by Jairo Arcila, a third-generation coffee grower from Quindio, Colombia, who has dedicated his life to cultivating exceptional coffee. His journey began in 1987 when he purchased his first farm, Finca La Esmeralda. Over the years, Jairo expanded his operations, acquiring five more farms, including Santa Monica, where he now grows the Castillo variety at altitudes of 1450–1500 meters in rich volcanic ash soil.

Throughout his career, Jairo balanced his full-time role as Mill Manager at one of Colombia’s largest coffee exporters with his growing passion for coffee farming. This dedication allowed him to build a successful enterprise that provides jobs for the local community and produces high-quality coffee.

A significant evolution in Jairo’s coffee production occurred with the involvement of his sons, Carlos and Felipe. As co-founders of Cofinet, they brought a deep understanding of Specialty Coffee to the family business, guiding Jairo in refining his picking, sorting, and processing techniques. This shift enabled Jairo to embrace new coffee varieties like Pink Bourbon, Java, Papayo, and Gesha, which now flourish on his farms.

One of Jairo’s standout practices is his innovative approach to coffee processing. On his Santa Monica farm, he employs a unique method of drying beans with mandarin zest after controlled fermentations. This technique imparts a distinct, complex flavor profile to his coffee, setting it apart in the Specialty Coffee market.

At our roastery, we take Jairo’s carefully cultivated beans and bring out their full potential. Our head roaster, Artyom, notes that Jairo’s coffee reveals its best characteristics when brewed in a flat bottom brewer, allowing the intricate aromas and flavors to fully develop.
