- Bloom with 50g water for 30sec.
- At 30sec aggressively pour in 70g of water.
- At 55sec gently pour in the remaining 130g of water.
- Brew should be done after 3:00.
How we brew Canephora

| Water: | 230g |
| Temperature: | 89-92°C |
| TDS: | 65ppm |
| Comandante: | 23 clicks |
- Bloom with 100 g of water for 45 sec.
- Add another 130 g of water.
- Pour-over should be done by 3:00 min.
